Vitivultural

An
integrated farming system is applied. Vineyards in "double Roayat" (3,000
plants/ha). The plants need to rely on natural precipitation rather
than irrigation. The soil is enriched with leftovers from the fermentation.

Vinification
techniques
|
The
vinification (80% of the total quantity) is made in temperature controlled
stainless steel tanks with cooling jackets where the alcoholic fermentation
takes place at low and constant temperature to preserve the aroma. The
rest 20% is fermented in small oak casks where the wine matures on the
lees for three months. A light pressing system is used.
