Origin
The Tsantali privately owned vineyard at Maronia in Thraki, located close to the sea.
Soil
Granuloblastic to augen and porphyroblastic with dark red colour.
Sub-soil
Schistose and granular.
Climate
The climate is mild wit rainy winter and favourable temperature during spring. In the summer the north winds, cool down the atmosphere. These weather conditions result in the absence of very high temperatures.

Vitivultural techniques
An integrated farming system is applied. Non-irrigated vineyard.
Thinning to increase fruit intensity, 2,700 plants/ha.
Harvest
End of August. Manual harvesting.
Vinification techniques
The vinification for the 50% is made in temperature controlled stainless steel tanks with cooling jackets where the alcoholic fermentation is done at low and constant temperature to preserve the aromas. The remaining 50% is vinified in small oak barrel (300L.) where, after the fermentation, remains for "maceration sur lies," for another 2 months.

Character
Luminous yellow with rigorbus fruit aromas, well-balanced, with a refreshing aftertaste.
Serving suggestions A delicious wine especially with oysters, lightly seasoned white meat and cheese soufflé. Best served at 10-12°C.
