Vinification
techniques
|
The
vinification for the 50% is made in temperature controlled stainless
steel tanks with cooling jackets where the alcoholic fermentation is
done at low and constant temperature to preserve the aromas. The remaining
50% is vinified in small oak barrel (300L.) where, after the fermentation,
remains for "maceration sur lies," for another 2 months.
