The term"Cava" describes
white and red Greek table wines that mature in barrel and bottle for two and
three years respectively.
VARIETY: Xinomavro, Agiorgitiko, and Cabernet Sauvignon.
TYPE: Red, dry.
AGING: Aged two years in oak barrels and another one in the bottle.
CHARACTERISTICS: Presents a rich, mature bouquet with the highly aromatic
character of Xinomavro. Distinct aroma of vanilla and prunes. It has inherited
the opulent, smooth taste of the Agiorgitiko variety.
FOOD PAIRING: Red meat, roasted or cooked, game and cheese.
